Chef Brandon Melton has unveiled a new summer dinner menu at Seville Quarter, 130 E. Government St., served in the Palace Cafe from 5 to 10 p.m. Monday through Saturday. Entree selections include Boudin sausage-stuffed free-range chicken breast, Creole tomato-braised beef short ribs, Parmesan-crusted Gulf grouper and blackened Harris Ranch New York Strip. Starters include smoked pork and collard green spring rolls, Cajun crawfish puppies smothered in tasso gravy, and creamy shrimp pimiento spread and fried green tomato stack.
